Steak & Ale Hawaiian Chicken



My first Job was at Steak & Ale. I started as a host then moved slowly in to the kitchen. On of the first things i had to memorize to make prep work faster was the Hawaiian Chicken marinade. After I moved on to a different carrier i kept it close to heart as my family loves eating it.


The Steak and Ale Hawaiian Chicken takes about 3 days to marinade. It does not have to take that long. I will generally do it 24 hours before i am ready to eat it. Starts out pretty easy with 6 chicken breast. In a large bowl i take the marinade ingredient and mix them together. I like to make sure that the sugar gets mixed in well and is not just sitting at the bottom of the bowl. Next we just add the chicken and make sure that the marinade covers the chicken. Cover the Hawaiian Chicken and place it in the fridge for 24 hours to 72 hours.

From there its all about the grill. The Steak and Ale Hawaiian Chicken always came with pineapple rings. So i make sure that they hit the grill as well. I always hit my grill with some olive oil before i place the Hawaiian chicken down so that way when i am cooking it the sugars dont cause it to stick to the grill.


Once that is done its time to serve it. I go with the classic mashed potatoes. But it doesn't really matter what you have with it as this will be a stand out.
