With staying healthy started looking in to a quick breakfast that i can grab and go. When i came across the idea for Ham and Egg Cups. This is a good alternative for me so when i get to leave the house and go to the office i can grab one and go. They are pretty easy to make for food prep.
To start the HaNm and Egg Cups start by dicing up the onions, sweet peppers and green chile. Next i added the coconut oil to the cup cake tin and then added the ham to form the ham cup. Next i started to add each to the cups as evenly as possible. Then you add the egg and cheese.
Then we are going to place them in the oven at 375 for about 20 mins. Once they come out you can serve them right away or you can do what i did and place them in a gallon ziplock bag and placed them in the fridge to eat all week.
